'Food Microbiology is concerned with the occurrence and behaviour of microorganisms (bacteria, yeasts, moulds, parasites and viruses) in food from primary production to consumption. This discipline also deals with the control of microorganisms in food resulting in a microbiologically safe supply of high quality food products. Essential topics in food microbiology are: contamination and microbial spoilage of foods; food preservation; food fermentation; food infections and microbial food intoxications; cleaning, disinfection and hygienic processing; microbiological analysis of food products; assessment and management of microbiological food safety risks. Important progress in food microbiology is expected from combining microbial ecology and physiology with genomics/proteomics and biomolecular informatics. This approach may lead to a better understanding of the behaviour of microorganisms exposed to stress factors imposed e.g. by preservation methods. Considerable progress in food microbiology also comes from quantitative modelling of growth and death of microorganisms in the food environment. This knowledge is useful for the improvement of existing and the design of novel preservation strategies, which are required for product innovation and for assuring the microbiological safety of the food supply. |
