Abstract

Developments in public health increase the need for safe food. Both governments and companies recognize this. The new EU food safety legislation is based on risk analysis of consumer health effects and lays primary food safety responsibility at food producing and processing companies. A future food safety control system must therefore be based on private control and risk analysis. As hazards can enter and control can take place at all stages in a food supply chain this must be a supply chain wide system. The current food safety system is insufficiently equipped to effectively and efficiently control future food safety, so a new food safety control system is needed. Private inter-company incentive mechanisms are needed that stimulate companies to actually and adequately implement the necessary control measures, tests, and procedures thereby optimally guaranteeing and controlling food safety on supply chain level. As private food safety control systems are just arising, corresponding inter-company incentive mechanisms and associated testing procedures guaranteeing hazard specific food safety norms do not exist and need to be developed. The purpose of this research is to develop a method to design and evaluate private food safety inter-company incentive mechanisms and to integrate these in supply chain food safety control systems. This research aims to design and evaluate alternative inter-company incentive mechanisms and associated testing procedures between pig farmers and slaughterhouse aimed at food safety assurance and to integrate these in future food safety control systems in the pork supply chain.
